Pace Hot Sauce was developed by David Pace in 1947. He grew up in Louisiana, where his family had a syrup company. He left there and went to college at Tulane University on a football scholarship. After that he served in World War II. When he got home from the war, he returned to Texas and he started his own food business.
Unfortunately, after the war came the rationing of sugar. With this dilemma he was forced to focus on other ways to keep the family syrup business continuing. He started this by experimenting with other ingredients. After decades of perfecting and tweaking different ingredients, this famous sauce was conceived. The sauce became popular due to the fact that everywhere he went, he was known to take it with him and use it himself. Upon leaving the establishment, he would leave the product behind. He also personally marketed it, bringing it to restaurants and local businesses to try it out.
He made sure to get hand picked jalapenos locally, after failing at an attempt to grow his own. Rumor has it that the wildlife liked them. The business started out in the back of a liquor store in the beginning, but demand of his product forced him to move to a larger building and hire help. Over the years, it began to become the dynasty that it is known as today. David died of heart failure in 1993. Since then the family owned business has been acquired by the Campbell Soup Companies.
